Hey Mudgirls! Ever looking around your pantry wondering what tasty snack you could have? Try these no bake energy bites! Easy, Fun, & Yummy! Add these to your weekly meal prep !

Here are the ingredients you will need:
1 cup old-fashioned oats
2/3 cup toasted shredded coconut (sweetened or unsweetened)
1/2 cup creamy peanut butter
1/2 cup ground flaxseed
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract
Ready for the most simple recipe? Here you go #pinkarmy fam!
Stir all ingredients together in a large mixing bowl until thoroughly combined.
Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled. (This will help the mixture stick together more easily.)
Roll mixture into 1-inch balls.
Enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.

Love how flexible this is—energy bites are basically my “whatever’s in the pantry” recipe too. I usually do almond butter, and adding vanilla makes it taste way more like dessert than a snack. Totally unrelated, but the mix of oats + chocolate chips always makes me think of a soft summer color palette for some reason—like the muted tan/cream + brown tones you see on StyleLookLab. Next experiment: tossing in a little cinnamon and seeing if it plays nice with the flax.
These are dangerous because I’ll eat like six without realizing it. I’ve started toasting the oats for a few minutes first and it adds a little extra “cookie” vibe—works especially well with the coconut. Side note: seeing “roll into 1-inch balls” made me think of that imgg ghibli ai style where everything looks cute and rounded, even snacks in photos. I’m going to try a version with dark chocolate + a pinch of flaky salt next time.
I make something pretty similar, and chilling really is the difference between “cute bites” and a crumbly mess. Do you ever swap the honey for maple syrup, or does that make them fall apart?
